Can I register a DIFC will online, or do I have to attend in person?

Both are possible. You can register at the DIFC Wills Service Centre in Dubai or remotely through the DIFC Virtual Registry via secure video conference from anywhere. Either way, the testator and two witnesses must attend simultaneously and sign electronically before a DIFC officer; the will is then entered on the register and becomes legally enforceable.
